Ingredients

  • 140gDark chocolate (70% minimum)
  • 4Egg whites
  • 35gGranulated sugar

    Melt the chocolate in a bain-marie or microwave in 30-second bursts. Let cool slightly.

    Whip the egg whites to stiff peaks. When they form soft peaks, gradually add the sugar and continue beating.

    Gently fold the egg whites into the melted chocolate in three additions, lifting with a spatula. Do not beat — you want to preserve the air.

    Pour into ramekins or glasses. Refrigerate for at least 2 hours before serving.
