Ingredients

  • 3Eggs
  • 1 LWhole milk (875ml + 125ml)
  • 100gCornstarch
  • 160gSugar
  • 2 packetsVanilla sugar
  • 1Vanilla bean
  • 1 rollShortcrust or puff pastry (homemade or store-bought)

Steps

    Mix the 3 eggs with 125ml of cold milk and the cornstarch until smooth with no lumps.

    In a saucepan, heat the remaining 875ml of milk with the sugar, vanilla sugar, and split vanilla bean. Bring to a boil.

    Pour the hot milk over the egg mixture, whisking constantly. Return to the saucepan over medium heat, stirring continuously until thickened.

    Line a 24–26 cm pan with the pastry. Pour the custard filling on top.

    Bake at 180°C (350°F) for 40 min. The top should be lightly golden and still jiggle slightly in the center.

    Let cool completely before unmolding.
