Ingredients

  • 250gMascarpone
  • 3Eggs (yolks and whites separated)
  • 80gSugar
  • 200mlStrong espresso, cooled
  • 16–20Ladyfingers (savoiardi)
  • Unsweetened cocoa powderFor dusting

Steps

    Whisk the egg yolks with the sugar until pale. Fold in the mascarpone with a spatula.

    Beat the egg whites to stiff peaks. Gently fold into the mascarpone cream.

    Quickly dip the ladyfingers in the coffee (1 second per side — don't soak them).

    Layer the cookies and cream in a dish, finishing with cream. Refrigerate for at least 3 hours.

    Dust with cocoa powder just before serving.

Tip

To lighten: replace half the mascarpone with ricotta (~-110 kcal/serving).
