Ingredients

  • 2 slicesSweet potato (approx. 150g cooked)
  • 2Eggs
  • 1 tbspOlive oil
  • Salt, pepper, smoked paprika

Steps

    Cut the sweet potato into 1 cm slices and pan-fry 5 min per side in olive oil.

    Boil the eggs for 6 min for a soft-boiled center, then transfer to cold water to stop cooking.

    Place the peeled and halved eggs on top of the sweet potato toasts.

    Season with salt, pepper, and smoked paprika. Serve immediately.
